THE DOWNTOWN FOOD SCENE IS FIRING ON ALL BURNERS

Justin Urso, Executive Chef at Winthrop Center, is one of the forces behind Boston's downtown dining boom—a post-pandemic surge of new and exciting eateries serving the downtown workforce, their clientele, and foodies from all over the region. Here is our recent interview with Chef Justin, lightly edited.

Vermilion

Downtown Boston offers a fantastic range of options for every part of the workday. For instance, at Winthrop Center, we offer The Lineup for quick, high-quality lunches on the go. With Vermilion, we provide a more polished setting for business lunches and client meetings. For happy hour or important dinners, Vermilion transitions into an elevated evening destination. Basically, if you work downtown in nearby locations like The Burnham, you have unlimited choices.

Vermilion is chef John Fraser’s take on a modern chop house. We’ve taken some of those classic chop house elements, such as tartare, a robust raw bar, and prime rib, and revisited them with a fresh new approach. The business community in particular appreciates Vermilion’s quiet, airy setting that’s perfect for client entertaining or more private business conversations. The menu ranges from lighter options like entrée salads to more substantial dishes such as our French Dip, allowing guests to tailor the experience to the occasion. We’re also the only restaurant in Boston that’s part of the Prime 850 Club, meaning our steaks are in the top 1%, graded at 850 or higher.

For busy professionals, we offer an express lunch, ensuring they can enjoy a full, well-paced meal in under 45 minutes. Our beverage program is equally thoughtful, with an extensive cocktail list designed to suit a wide range of palates, alongside a strong selection of non-alcoholic offerings.

Downtown workers love The Lineup because it offers variety, convenience, and quality all in one place. We definitely cater to them, with options such as burgers at Big Grin and Greek-inspired bowls at IRIS Mezze to Neapolitan-style pizza that’s fired and ready within minutes. Day Shift rounds out the experience with an all-day café, making it easy for workers to stop in for a great coffee or quick bite at any point in their day. And the pop-up kiosk allows them to try something new every few months.

Definitely. We continue to welcome more people into the neighborhood and hope they’re just as eager to rediscover the downtown restaurant scene as we are to delight them. At Winthrop Center, we still feel a bit like a hidden gem in Downtown, but we’re definitely becoming a go-to destination for folks flocking into the area as it continues to evolve.

Diversity is the number one thing. There are people from every walk of life, which lends itself to so many different possibilities in downtown Boston. There’s also no place else with the ease and accessibility of downtown. If you know Boston, you know that other parts of the city can be hard to access. Where we’re located, and especially with The Burnham having the Downtown Crossing station right below it, it’s super easy to get here from anywhere.
